After a hard day at work or school, you are faced with a few options when it comes to dinner: eating out, leftovers or going to bed on an empty stomach. Sufficing to say, only leftovers sound remotely nutritious, as long as it’s not junk. The other option is to try out some easy recipes for dinner that will only take 30 minutes or less of your time.

Quick Chicken Curry
For this, you can chop up some chicken fillet into cubes or you can use rotisserie chicken left over in your fridge. Cook your rice as per the package instructions and proceed to make the curry as this comes to a boil. Fry some onions, garlic, pepper and the chicken cubes in some olive oil. Add in some curry powder and continue to stir.
Finally add some cream and plain yoghurt and allow the curry to simmer for no more than 5 minutes. To serve, put your rice in a bowl and then add your curry on top.
Pasta with sausage and Cabbage
Boil your pasta as per the instructions. Next, chop some sausage and fry in a skillet with olive oil for about 5 minutes. Transfer the sausage and use the same skillet to cook your cabbage. You can substitute the cabbage for kale, spinach or even lettuce (these then cut down the cooking time even more as you do not have to cook lettuce).
Cook the cabbage in onion or shallots with some pepper and salt and let it cook for 5 to 6 minutes. Add some chicken broth and bring to the boil for about 4 minutes. Finally, add the cabbage to your pasta and then top it with the sausage. Add chives or coriander to garnish.
Lamb and Vegetable Stew
While this may sound like a crockpot recipe that could take all day to make, it actually takes no more than 30 minutes. This is one of the easy recipes for dinner that you can make a batch and refrigerate for future meals. You will use lamb steaks that have been deboned and cut into 2 inch thick cubes.
Start by seasoning the lamb with salt and pepper and cook in some olive oil for 5 to 6 minutes and then put it aside. Add some olive oil to the pan and add some onions and carrots (you can add as many vegetables as your heart desires, keeping in mind that each has different cooking times). Let these cook for about 4 minutes and then add some flour to help thicken the stew and cook for one more minute.
You can add some wine and this will aid to bring all the flavors together while scrapping the brown bits off the pan. Add some beans, tomatoes and broth and cook for about 10 minutes till tender. Put in the lamb pieces in and add some chopped parsley, salt and pepper and then stir it all together. You can serve this with rice or mash potatoes. To store in the freezer, let the rest of it cool and split it into bowls. When you need to cook them, you will only refresh in a pot for about 10 minutes.
All you need for this dish is some macaroni which you will cook as instructed. You will then need some canned tuna, cream of chicken soup, fried onions and cheddar cheese. Add in and properly mix all the ingredients except the fried onions and the cheese which will be sprinkled on top of the mix.
Place in a pre-heated oven at 375/175 degrees for 25 minutes. Then, sprinkle the fried onions on the top and put it back into the oven for another 5 minutes. This one of those recipes for dinner that you can refrigerate to eat another day.
